Hurricane Katrina changed a lot of lives. In Chef Tommy's case, it meant a move to Arkansas. Gone was the easy access to fresh seafood and local ingredients that he was used to having. This life upheaval led him on a search to source the ingredients with which he cooked. Born out of his desire to recreate all of the dishes he was accustomed to eating and cooking, You Can't Take New Orleans Out of the Cook represents the true New Orleanian in him. Inside, you will find traditional New Orleans dishes, family favorites, and some restaurant recipes from places he worked. He is happy to share his love for his hometown cuisine with you.

Tommy Centola, a lifelong New Orleans resident, moved to Searcy, Arkansas, after Hurricane Katrina. He lives with his wife Peggy, and their two dogs: MLP (My Little Precious) Hope and his Buddy Alfredeaux. You Can't Take New Orleans Out of the Cook represents his love for all things New Orleans. He has been able to recreate his favorite dishes using locally available ingredients.
